Menu planning


I have an exciting day planned for today. It consists of: church, lunch, cutting coupons, planning my menu for the rest of the month, etc.... As you can tell, nothing spectacular but all necessary things to do.
I have 2 nights each week that I work late and I MUST start planning for them ahead of time. I refuse to stop any more on the way home to get a meal. (The reason I do this is because my husband like his meal on the table when he comes home.) Of course, I could (and do) use my crockpot (always a good thing). One person suggested I make up a casserole ahead of time and have it ready to pop into the oven. I thought that was a good idea. Do you have a suggestion for me? I would love to hear from you!

  1. How about having one day where you cook ( kind of like once a month cooking) and freeze meals and just pop them into the oven or microwave on days when you are working late???

  2. These are my favorites for busy days, I think they all involve some cooking done ahead.
    A big batch of taco meat, frozen in meal size containers for quick tacos or taco salads.
    A big batch of chili, makes frito chili pie or served on rice.
    Spaghetti sauce from the freezer.
    Grilled meat - Jeff smokes pork loins and chicken in bulk

    I've cooked big batches of roast beef and froze it after I shredded it with some of the broth. It is good served on noodles or on rolls for hot dip sandwiches.

    Cooked diced chicken is nice to make a really quick potpie with canned cream soup, mixed vegetables and then canned or drop biscuits on top.

  3. How about having your husband have the meal on the table when YOU come home - ha!

    Other than that - if you feel comfortable plugging in a crockpot while you are gone, you could get a meal going in the morning (in your spare time...) Linda says facetiously. Or, you could put the meal together in the crockpot and let it cook while you sleep. Put it away for the day and then reheat it when you get home.

  4. We are in a soup rut around here. :) But chilly weather is coming back (it's here, actually)so it's a rut I don't mind. Soup reheats beautifully, too.

  5. I would cook double quantites of a few meals like lasagne, meatballs, chicken curry, chilli, so that all you had to do was heat whilst the rice spagetti was cooking.
