Pickled onions recipe

My friend Rhonda, who writes the blog If You Do Stuff, Stuff Gets Done, is a wonderful homemaker and cook. She recently shared this easy pickled onions recipe.

Pickled Onions
¾ cup apple cider vinegar
¼ cup water
1 tablespoon sugar 
Salt and black pepper to taste

(Optional: I added a few peppercorns, 1/4 tsp red peppers, and a couple of cloves)

Bring the vinegar, water, sugar, salt, and pepper to a boil, stirring until everything is well combined. Pour the hot mixture over thinly sliced onions.


I used half of a large red onion, sliced about 6 mm thick (roughly ¼ inch—my mandolin measures in metric). An empty pasta sauce jar was just the right size for storing them. I used apple cider vinegar, but you can substitute red wine vinegar, rice vinegar, white vinegar, or another variety if you prefer.

This was delicious! 

I let mine sit uncovered for about an hour, then put the lid on the jar and refrigerated it. Most recipes say they’ll keep in the refrigerator for 2–3 weeks.

National Fritters Day, December 2

What's a fritter? According to Answers.Com, a fritter is a small cake made of batter, often containing fruit, vegetables, or fish, sautéed or deep-fried. [Middle English friture, from Old French, from Late Latin frīctūra, from Latin frīctus, past participle of frīgere, to roast, fry.]

In Pigeon Forge, Tennessee there is a business called The Apple Barn. It consists of a restuarant, a grill, a winery, a gift shop, etc.... They make the BEST Apple Fritters ever! We are going to Pigeon Forge right before Christmas and I intend to have an apple fritter from there. Here is the recipe:


Apple Fritters

1/2 cup milk
1 egg
2 tbl. melted butter
1 tbl. orange peel
1/2 cup chopped apples (with skin on)
1 tes. vanilla
1 1/2 cups cake flour
1/4 tsp salt
1 tbl. baking powder
1/2 cup sugar

Blend sugar with all wet ingredients. Fold in orange peel, salt and baking power. Fold in flour, fold in chopped apples. Do not over mix. Drop spoonfuls of batter in 325 degree oil and fry until golden brown.

Chicken Pot Pie

Easy Chicken Pot Pie

Ingredients
Mix all together in 8x8 glass dish:
1 cup cooked chicken, cut into bite sized pieces
1 2/3 cups frozen vegetables
1 (10 ounce) can cream of mushroom soup
2 boiled eggs, cut in slices

Mix together:
1 cup Bisquick reduced-fat (regular) baking mix
1/2 cup milk (I use 2%)
1 egg

Directions
Preheat oven to 400 degrees. (I use my toaster oven and preheat to 375 degrees). Mix chicken, vegetables, eggs, and cream of chicken soup together. Spread into bottom of non greased 9" round glass pie pan or a 8x8 glass baking dish. Mix remaining ingredients (bisquick, milk and egg) and pour on top of chicken mixture. Salt and pepper as desired.

Bake in oven for 30 minutes or until top turns golden brown.
